Quinoa with Veggies
Saturday, March 17, 2012 at 11:46AM 1 ½ Cups Quinoa Chicken Broth - optional 4 Cups Broccoli, chopped 1 Red Pepper, chopped 10 Mushrooms, sliced 2-4 Cloves Garlic, minced (I use more!!!) 4 Tsp Basil 2 Tsp Pepper 1-2 Tsp Red Pepper Flakes - optional 2-3 Tbsp Olive Oil Cook Quinoa according to package directions. I use chicken broth instead of water. Saute garlic and red pepper flakes in oil. Add veggies and cook until tender. Season to taste. Mix Quinoa and veggies together. Servings: 6 Calories per serving: Approx. 250, using chicken broth Options: Any veggies are good – a great way to clean out the refrigerator!!! Note: I always make extra and freeze in meal portion containers for lunches or quick dinners. Note: I love the added flavor of herbs and spices – don’t be afraid to add more of the above or experiment with others!!! Recipe by Carol Dali
